With poetry and fiction, almost all of it has come from competition rewards and not publication deals (not counting issue copies). I think that it's possible to make a decent amount of money if you're good enough and consistently winning paying contests, but my experience has told me that pay is extremely minimal for appearance in magazines—they expect you to acknowledge their publication and advertisement of your name to be fair compensation for rights to your work.
